Cheese Dumplings with Sour Cream recipe

Preparation time: 30 minutes

Makes: 4 servings

  • 9 ounces (250 g) farmer cheese (recommended low fat or fat free)
  • 2 eggs
  • 3 tablespoons semolina flour
  • one pinch of salt
  • 1 tablespoon flour
  • 1-2 tablespoons bread crumbs
  • sour cream (recommended low fat)

  1.  Mix very well  the cheese, the eggs, semolina flour, flour and salt  in a bowl . The composition must be  just slightly sticky so that it can be boiled and not disintegrate.
  2. Combine breadcrumbs and oil in a small skillet and toast over medium heat, stirring constantly, until became golden brown (about 2-3 minutes). Mix with sugar.
  3. Boil watter into a pot. Reduce the heat to a low simmer. Take a spoonful of the composition and put it into the simmering water. Wait for a minute and see if it disintegrates. If this is the case, add a little more flour in the composition. Otherwise proceed with the other dumplings.
  4. Dumplings are boiled when they raise at the surface of the water. Take them out with a strainer and roll them into the mix of toasted breadcrumbs and sugar.
  5. Serve hot with sour cream on top and sprinkle with sugar.
