Spinach recipes - European style


Would you like to add more healthy vegetables to your dinner menu? Spinach is a very good source of iron, vitamin K and folic acid,  and it is also very rich in antioxidants. Personally, I don't like it very much raw, but I love it as a puree served along side grilled meat or sausage. Here are my favorite spinach recipes. Be careful that the spinach shrinks quite a lot when cooked, so you will need about 1 pound to get four servings of cooked spinach.

 

Spinach Recipes - Quick and Easy Dinner Recipes

Spinach puree

Spinach puree

Cooking time: 30 minutes

Makes: 4 servings

Ingredients:

  • 1 pound baby spinach
  • 1 cup milk
  • 2-3 garlic cloves
  • 1 oz butter
  • 1 tablespoon flour

Preparation:

  1. Wash the spinach and drain it. Peel 2-3 garlic cloves and mince them.
  2. Bring to boil water in a large pot and put the spinach in.
  3. Simmer for 10 minutes than drain.
  4. Put the boiled spinach, flour and butter in a bowl and mix them with mixer.
  5. Put the puree in a non-stick pot, add milk,  minced garlic and salt and simmer for 4-5 minutes. If the puree is too thick, you could add a little bit more milk.
  6. Serve warm as a side to fried eggs or grilled meat or sausage.

Spinach stew

Cooking time: 30 minutes

Makes: 4 servings

Ingredients:

  • 1 pound baby spinach
  • 2 tablespoons tomato paste
  • 1 small onion
  • 2-3 tablespoons olive oil
  • 1 tablespoon flour
  • lemon juice

Preparation:

  1. Wash the spinach and drain it. Peel and wash the onion.
  2. Bring to boil water in a large pot and put the spinach in.
  3. Simmer for 10 minutes and drain. Keep the water.
  4. Chop the onion and the boiled spinach.
  5. In a non-stick pot add 2-3 tablespoons oil and the chopped onion and saute. Add some water from the boiled spinach and simmer for 2-3 minutes.
  6. Add the chopped spinach, tomato paste and flour, stirring continuously. Use the spinach boiled water for making the sauce.
  7. Simmer for 10 minutes than add some lemon drops.
