Shortbread Linzer Cookies


 A truly gourmet dessert, these Linzer cookies are very suitable for special occasions such as Christmas or Valentine's Day. It would be a good idea to do a double batch because they are going fast!

Shortbread Linzer Cookies Recipe


Preparation time: 30- 35 minutes ( preparation: 10 minutes; baking: 10-12 minutes; filling: 10 minutes)

Makes: 8 servings


  • 3.5 ounces (90 g)  vanilla sugar (I usually use Dr. Oetker Natural Vanilla sugar packages)
  • 5 oz (140 g) butter 
  • 7.5 oz (210 g)  flour 
  • 2 yolks 
  • apricot preserve


  1. Mix the yolks with sugar.
  2. Add the butter and beat the ingredients until they became foamy.
  3. Mix the flour with the foamy composition and knead.
  4. Spread a thin sheet of dough and use cookie cutters to cut in desired shapes. Cut a round or heart shaped hole in the middle for about half of the cookies.  
  5. Grease a non-stick tray with butter and sprinkle with flour.
  6. Preheat the oven at 325 F and bake for 10-12 minutes (until the cookies become slightly golden). 
  7. Powder the cookies with the middle holes with the vanilla sugar.
  8. Pair cookies with holes and without holes in the middle and  stick them together with apricot preserve (you can also use strawberry jam but apricot is my personal favorite), such as the cookies with holes will be on top.
  9. Arrange nicely on a serving plate and enjoy!
