Roast Lamb Leg Recipe


The roast lamb leg is the classic lamb dish for Easter in Romania.It is easy to make and very gourmet looking. Please your guests eyes and taste buds with this easy to make recipe.

Roast Lamb recipe

Cooking time: 1.5 hour (preparation : 30 minutes; baking: 1 hour)

Makes: 6 servings


  • 1 lamb leg ( preferably back leg)
  • salt
  • ground black pepper
  • 5-6 garlic cloves
  • thyme (optional for flavoring)
  • 2 tablespoons olive oil
  • 2-3 tablespoons white wine
  • new potatoes - for roasted potatoes (optional)


  1. Wash and peel the skin from the lamb leg. 
  2. Punch superficial holes into the meat and insert the garlic cloves into the holes.
  3. Spread olive oil on the lamb leg and season with salt and black pepper.Spread finely chopped thyme on top of the lamb leg if you wish. Leave it in the baking tray for half an hour for the seasoning to get into the meat.
  4. Preheat the oven at 400 F. At first you need to broil it at a high temperature to obtain a nice crust; after 15 minutes reduce the heat.
  5. Add 1/2 cup water. Spread the sauce on top. Flip the leg from time to time.
  6. After 40-45 minutes add the wine.
  7. Leave the lamb in the oven for about an hour (until the meat starts separating from the bone).

You can serve the roast lamb leg and with fresh lettuce salad, and roast potatoes on the side. You can make some delicious lamb flavored roast potatoes by adding some slices of potatoes in the baking tray with the lamb. I like best new potatoes, just washed (not peeled) and cut in half.
