Potato Stew - Dinner Recipes ready in 30 minutes

Are you in a hurry to serve dinner and with not much left in your pantry before a new trip to the grocery store? These delicious potato stew recipes might save the day! Add a chicken drumstick or a sausage on the grill (or pan) and you have a delicious dinner ready in 30 minutes. Enjoy!

Potato Stew with tomatoes - an easy dinner recipe

Potato Stew with Tomatoes

Cooking time: 30 minutes (10 minutes preparation; cooking:20 minutes)

Makes: 4 servings

Ingredients: 

  • 4 medium potatoes
  • 1 medium onion
  • 1/2 large red pepper
  • 2 medium tomatoes
  • 2-3 tablespoons olive oil
  • ground black pepper

Preparation:

  1. Peel and wash the onion. Wash the red pepper and remove the seeds. Wash the tomatoes.
  2. Chop finely the vegetables (you can use a food chopper at the finest setting)
  3. Peel, wash and cut into cubes the potatoes.
  4. Heat the oil in a pot and add the potatoes cubes together with the chopped vegetables and a bit of water and salt. Saute everything stirring continuously.
  5. Add more water to cover the potatoes and simmer.
  6. Season with salt and ground black pepper.
  7. Can be served with sausages, grilled chicken or hot dogs on the side.

Potato Stew with bay leaves - quick and easy dinner recipe

Romanian Potato Stew

Cooking time: half an hour (10 minutes preparation; cooking:20 minutes)

Makes: 4 servings

Ingredients:

  • 4 medium potatoes
  • 1 medium  onion
  • 3 bay leaves
  • 2-3 tablespoons olive oil
  • black pepper whole (peppercorn)
  • 2-3 tablespoons sour cream

Preparation:

  1. Peel and wash the onion. Chop it.
  2. Heat the oil in a pan and add the chopped onion. Saute the onion stirring all the time. Add watter and simmer for 5-6 minutes. 
  3. Peel, wash and slice the potatoes.
  4. In a cooking pan bring to boil and simmer for 15 minutes the sliced potatoes with bay leaves and peppercorns.Take away the bay leaves - otherwise the sauce can become bitter.
  5. Add the saute onion. Season the stew with salt, ground black pepper and sour cream.
  6. Can be served with fried eggs, grilled chicken, sausages or hot dogs on the side.
