These instructions are for a generic bread maker machine that has the option to select a dough cycle. The instructions were tested for my Panasonic bread maker machine, (Sd Yd250). I have used this machine for 10 years plus for bread and panettone recipes, and the results were always excellent.  I  just recently replaced it with an identical new one, after the old one had an accident dropping on the kitchen floor.

Pasca - A Bread maker machine recipe

Preparation time: about 3.5 hours


  • 18 ounces (1/2 kg ) bread flour
  • 3 eggs
  • 5.3 oz (150 g) sugar
  • 4.4 oz (125 g) butter
  • 1 cup (1/4 l ) milk
  • 1 pinch salt
  • 3 teaspoons dry yeast
  • grated lemon peel
  • rum extract
  • vanilla extract

Filling ingredients:

  • 1.6 pound (750 g) farmers' cheese (you can also use cream cheese)
  • 3 eggs
  • 2-3 tablespoons sour cream
  • 5.3 oz ( 150 g ) sugar
  • 2.6 oz ( 75 g ) butter
  • 3 tablespoons flour
  • grated lemon peel
  • vanilla extract
  • 4 oz (110 g) raisins
Prepare filling: Mix the cheese with sugar, butter and sour cream. Add one by one the eggs and mix well. Add the other filling ingredients. Mix the filling well.

Prepare Dough: Here the step by step instructions on making Pasca dough using the bread maker. The filling needs to be done manually before the dough is ready.

  1. Make sure that you verify the machine's capacity, and adjust the quantities accordingly. For my machine I make the above  portions for the sweet cheese panettone recipe. The way to verify is to match the quantity of flour in our recipe with the quantity of flour usually recommended in the bread recipes that come with the machine. The machines usually accept multiple sizes, mine has the Medium, Large and Extra Large options. For example, if the Large option corresponds to about 1 pound of flour in their recommended bread recipe, then use the ingredients as above and set your machine for the Large option.
  2. Add all the ingredients, except the dry yeast into the bread machine.
  3. The dry yeast should be added into the yeast dispenser.
  4. Select the "dough" option. 
  5. Start the machine. The machine will do the dough for you.
  6. Grease a deep baking pan with butter and sprinkle it with flour. Set aside a small portion of the dough, and put the rest on the bottom of the baking form (you may use a rolling pin to obtain a dough sheet).
  7. Pour the cheese filling in the baking pan on top of the dough sheet.. Don't exceed the top edge of the baking form.
  8. Using the dough you have set aside, roll it in a pencil form, braid, and border the top of the cheese filling. If the dough is too soft to roll, add a bit more flour to increase consistency.
  9. Beat an egg with 1 tablespoon water and brush the dough top.
  10. Preheat the oven and bake it on medium heat (375 F) for 50-60 minutes.
  11. Let it cool for about half an hour before putting on a serving plate.
  12. Sprinkle on top with confectioners' sugar.
  13. Enjoy!
