Olive Sauce

This sauce works great with any kind of meat - boiled or baked. My favorite quick and easy dinner meal is chicken or beef soup for the first course, and then use the boiled chicken or beef meat and the vegetables from the soup for a second course served with this olive sauce on top.

This olive sauce also works great for the turkey leftovers from your Thanksgiving dinner. Its tangy flavor gives the right amount of spice to the otherwise bland turkey meat. Best of all, this olive sauce recipe is ready in minutes.

Olive Sauce - A quick and easy dinner recipe

Preparation time: 20 minute

Makes: 4 servings


  • 1 small onion
  • 2 tablespoons olive oil
  • 6 oz tomato paste
  • 6 oz pitted olives (I prefer Kalamata olives)
  • 1 teaspoon flour
  • 2 cups water
  • salt
  • 1-2 lemon slices


  1.  Peel, wash and slice the onion.
  2.  Put the olive oil in a non-stick skillet and saute the onion.
  3. Add tomato paste and water. Bring it to a boil and then simmer for 10 minutes.
  4. Add the pitted olives and simmer for another 10 minutes. Add 1-2 lemon slices. These give the sauce its special tangy flavor.
  5. Add the flour mixing carefully for a smooth texture, and bring the sauce to a boil.(It is best to mix in a cup the flour with water - add little by little water, mixing well to make it a smooth texture - and then pour little by little into the skillet, mixing continuously).
  6. Put the sauce in a serving bowl and serve with meat and vegetables.
  7. Enjoy!
