Okra stew recipes - like mom used to make

Okra is a highly nutritious green pod vegetable, which is low in calories, and rich in dietary fiber, foliate, and vitamins A , C and K. It is an excellent choice for increasing the healthy vegetables consumption in your diet, yet not so many people know how to cook it. You can find okra in many grocery stores, year round. When you buy it, select the pods that have a fresh appearance, green and crisp, avoid the ones that are soft, have a sunken appearance and have spots. My mom used to make a delicious okra stew, which I also learned to cook for my family. The stew can be made as a purely vegetarian dish, or it can be mixed with chicken or veal cutlets. The secret to a delicious okra stew is the scalding of the okra pods in water with vinegar (this reduces the mucilaginous content of the pods and gives them a pleasant taste).

Fresh okra

Okra stew recipe - vegetarian

Cooking time: about 30 minutes

Makes: 4 servings


  • 1/2 big onion 
  • 3/4 to 1 pound okra 
  • 2 tablespoons vinegar 
  • 1 tablespoon wine 
  • 2-3 teaspoons tomato paste
  • 2 tablespoons olive oil

Okra stew


  1. Peel and chop the onion. Wash the okra pods and cut the okra tops.
  2. Boil some water with vinegar.
  3. Add the okra pods into the boiling water and keep for 1-2 minutes, then drain.
  4. Put the drained okra in a pot and with the finely chopped onion, add water and bring to a boil,  then simmer for about 20 minutes.
  5. Add the tomato paste and simmer for another 5 minutes.
  6. In the end, add the wine, and simmer for another 2-3 minutes. 

Okra stew - with chicken or veal

Same ingredients and preparation as for the vegetarian okra stew, except now you add  4 chicken drumsticks or 4 veal cutlets, and before adding the okra in the pot, saute lightly the meat, then continue with step 4 above. Another version for the okra with meat is to make the vegetarian okra stew and serve it as a side for grilled chicken or pork chops. This is my personal favorite! Enjoy!
