Napoleon - A French Dessert Recipe

Napoleon Recipe

Cooking time: about 30 minutes

Makes: 6 Napoleon servings

  • 1 pack Puff Pastry Sheets ( I use Pepperidge Farm® Puff Pastry sheets)
  • 4 eggs
  • 10 tablespoons sugar
  • 8 tablespoons flour
  • 2 lbs milk
  • vanilla extract

  1. Thaw the Puff Pastry sheets according to the package instructions.
  2. Unfold the puff pastry on a floured table and cut it in three equal sheets (from a package of Pepperidge Farm® Puff Pastry you can make 6 Napoleon servings).
  3. Beat the egg into a small bowl and brush the sheets that will go on top.
  4. Grease a non-stick baking pan and sprinkle with flour. Bake the sheets for 15 minutes in a preheated oven at 375 F, until light golden.
  5. Put the bottom sheets on a serving plate and top with thick vanilla creme, add the middle layer sheets and again top with thick vanilla creme. Finally add the top sheets layer and sprinkle the top with confectioners sugar.

Vanilla Creme Preparation

  1.  Beat 4 yolks with sugar and vanilla extract . Add the flour.
  2. Bring to a boil the milk in a pot, stirring all the time. Add the milk on top of the egg composition, stirring continuously. Simmer the composition stirring continuously until the composition becomes thick.
  3. Add a teaspoon butter as the creme is still hot.
  4. Beat two egg whites until the become a stiff  foam.
  5. When the creme is cold enough add 4-5 tablespoons of foam (makes the creme smoother).
