King's Sweet Bread - a light dessert recipe


King's sweet bread is a cake based on the basic pandispan recipe with added walnuts, raisins,  dried fruits, or chocolate chips. My favorite is the version with walnuts, and I think the combination of walnuts and chocolate chips would make it even more delicious. This is a light recipe that you can enjoy guilt free.

Preparation time: about 1 hour ( preparation: 10 minutes; baking: 50 minutes)

Makes: 12 servings


  • 6 eggs 
  • 6 tablespoon sugar 
  • 4 tablespoons flour 
  • 7 ounces (200 g) raisins ( or: walnuts nuts,  dried fruits; chocolate chips can also be used)


  1. Beat the egg whites with a mixer until they become a stiff foam.
  2. Add the sugar, one tablespoon at a time, and beat some more. 
  3. Add the yolks one by one and mix very slowly with a spoon using large motions. 
  4. Add the flour, one tablespoon at a time,  and also mix slowly. 
  5. Add the raisins and again mix slowly. 
  6. Grease a non-stick tray with butter and sprinkle with flour.
  7. Bake in the oven at medium heat ( 350-375 F) for 30 minutes. You can test if it is done by ticking a toothpick in the center of the cake. If it comes out clean (without traces of batter), then the cake is done.
  8. Let the cake cool and cut in squares for serving.
