Fruit Cake - A Light Dessert Recipe


This Fruit cake recipe is ideal for summer days, but also for the times when you would like a very light and refreshing dessert. My favorite is with sour cherries or apricots.


Fruit Cake recipe


Preparation time: 1 hour (preparation: 10 minutes; baking: 50 minutes)

Makes: 6 servings


  • 6 eggs 
  • 6 tablespoons sugar 
  • 6 tablespoons flour
  • 1 pound fruit (apricots, sour cherries, cherries or plums)


  1. Beat the egg whites  with a mixer until they become a stiff foam.
  2. Add sugar one tablespoon at a time and beat some more.
  3. Add the yolks one by one and mix slowly with a spoon using large motions.
  4. Add the flour one tablespoon at a time and mix slowly.
  5. Grease a non-stick tray with butter and sprinkle with flour.
  6. Pour the composition in the tray.
  7. Preheat the oven at 375 F and bake for 20 minutes.
  8. Pitt the sour cherries, the cherries, apricots or plums.
  9. After the 20 minutes have passed, when the cake is half baked, add the fruits on top (the apricot halves or plums must be with the pit-hole up and sprinkled with sugar). Bake the fruit cake until cooked. You can test if it is cooked by inserting a toothpick into the cake. If the toothpick comes out clean, without traces of batter, then the cake is done).
  10. Let the cake cool and cut in squares for serving.
