Flaperettes - A European Gourmet Dessert Recipe


Flaperettes is a traditional recipe in my family that I really couldn't find anywhere else. It is somewhat reminiscent of meringues, but I believe the recipe origins come from the German side of my family. No matter its origins, it is absolutely a gourmet dessert, with an irresistible combination of meringues type cookies with walnuts and chocolate cream.

Preparation time: 2 hour and 30 minutes ( preparation: 30 minutes, baking: 2 hour)

Makes: 24 servings


  • 4 eggs
  • 7 1/4 ounces (210 g) sugar
  • 5 ounces (140 g) grounded walnuts
  • 1 tablespoon breadcrumbs

Cream Ingredients:

  • 3.5 ounces (100 g) sugar
  • 3.5 ounces (100 g) butter
  • 2 yolks
  • 2 tablespoons cocoa (you can add more if you would like a more chocolaty taste)

Cookies Preparation:

  1. Beat the egg whites with the mixer until the foam becomes stiff.
  2. Add slowly the sugar, beating constantly with the mixer.
  3. Add gradually (spoon by spoon) the grounded walnuts and breadcrumbs, mixing very gently with a wooden spoon.
  4. Grease a baking tray with butter and sprinkle it with flour.
  5. Using a teaspoon form round shapes on the baking tray. Keep a little distance from each other because they increase at baking.
  6. Preheat the oven and bake for about 2 hours at minimum heat (200 F), until the cookies become slightly golden brown.
  7. Let the cookies cool and remove them with a spatula.

 Cream Preparation:

  1. Mix the butter with sugar until you obtain a creamy composition.
  2. Add 2 yolks and 2 tablespoons cocoa. Mix well.
  3. Stick together pairs of cookies using a teaspoon of the cocoa cream spread on one cookie's base than add another one on top.
