Chicken Soup - An Easy Dinner Recipe

Chicken Soup recipe

Cooking time: 50-60 minutes (preparing: 20 minutes; cooking: 30-40 minutes)

Makes: 6 servings


  • 6 chicken drumsticks or tights
  • 4-5 carrots
  • 2-3 parsnip roots
  • 1 small celery root (optional)
  • 1-2 medium sized potatoes
  • 1 large onion
  • 3-4 garlic cloves
  • salt


  1. Wash and peel all the vegetables and cut them in halves.
  2. Bring to a boil 8 cups water and add the chicken and vegetables. It is best if the chicken is salted before added to the water. Add 2-3 pinches of salt to the water.
  3. Simmer for 30-40 minutes (occasionally removing the foam) until a fork can penetrate easily both the meat and vegetables. Replenish the water as it evaporates. Taste and adjust for the right amount of salt. Tip: remember that salt enhances the flavors. If the taste is too bland it probably needs a bit more salt, or you need to simmer more to make the soup more concentrated.
  4. When the meat and vegetables are tender, drain the broth, removing the meat and the vegetables. These can be served as a second course with a homemade sauce (see our quick and easy dinner recipes).
  5. You can also remove some excess fat from the soup after refrigerating, by removing most of the solid layer of fat on top of the soup.  
  6. Noodles can be boiled separately in water with a bit of salt. Add the noodles only when serving the soup. Noodles left in the soup for longer periods of time will absorb it.
